  • Fresh mint sprigs
  • 4 ounces citrus vodka (we prefer Absolut Citron)
  • 2 ounces Simple Syrup (recipe follows)
  • 2 dashes of spiced bitters (we prefer El Guapo Holiday Pie)
  • Pomegranate seeds, for garnish

Jacob Marley Cocktail

The holiday season may be over, but we’re not ready to stop celebrating. Named after the deceased business partner of Scrooge in Dickens’s A Christmas Carol, this drink sports the fun seasonal colors of red pomegranate and green mint. It will resurrect the holiday spirit at any gathering!

Directions

Simple Syrup (makes 1 cup):

Place 1/2 cup of sugar in a medium saucepan with 1/2 cup water and bring to a boil over medium heat. Stir until the sugar is dissolved, and remove from the heat. Store refrigerated and covered for up to 1 week.

Cocktail:

Slice a Meyer lemon in half, cut 2 very thin rounds, and set aside.

Fill a shaker half full with cubed ice and add 20 to 24 fresh mint leaves. Muddle very well to break the ice and pulverize the mint. Squeeze the juice from the remaining Meyer lemon halves into the shaker. Add more cubed ice to the shaker to fill it completely. Add the vodka, Simple Syrup, and bitters. Shake well and double strain into 2 coupe glasses. Garnish with a tablespoon of fresh pomegranate seeds, the Meyer lemon wheels, and mint sprigs.
