Ingredients:

  • 1.5 cups ground graham crackers (about 15 crackers)
  • 4 tablespoons unsalted butter, melted
  • 2 cups strong coffee
  • 2 teaspoons cornstarch
  • 2 teaspoons water
  • 1.5 cups bittersweet dark chocolate chips (about 8 oz.)
  • 2 cups sugar
  • 1 teaspoon sea salt
  • 3 (8 oz.) packages cream cheese
  • 8 eggs

Mocha Cheesecake Recipe

Who doesn’t love the decadence of cheesecake, especially one that brings together the delicious flavor pairing of dark chocolate and coffee? This recipe takes some time, mainly spent waiting for it to be completely done and ready to serve. But trust us, it’s worth every minute. The cheesecake needs to be refrigerated overnight before serving.

Directions:

1. Preheat the oven to 300°F and line the bottom of a 10-inch springform pan with aluminum foil. Rub room temperature butter around the edges of the bottom of the pan. Combine the graham cracker crumbs and melted butter in a small bowl and press the mixture into the bottom of the pan.

2. Simmer the coffee in a sauce pan over low heat until reduced to 1 cup. Combine the cornstarch and water in a small bowl and stir into the hot coffee. Add the chocolate, sugar and salt to the coffee mixture and stir until the chocolate is melted and the mixture is thoroughly blended. Remove from the heat and set aside. In a food processor, combine the cream cheese and coffee mixture, blending until smooth. With the processor running, add the eggs, one at a time, until well blended. Pour the cheesecake mixture into the prepared pan and place onto a sheet pan. 

3. Place the pan on the oven’s top rack and bake for 1.5 hours, then reduce the heat to 200°F and cook for about 30 minutes longer, or until the cheesecake is set and firm. Leaving the oven door closed, turn off the heat and leave the cheesecake in the oven for 10 minutes more. Take the cheesecake out of the oven and cool at room temperature for 30 minutes. Refrigerate overnight before serving.
