Ingredients:
- 4 tablespoons sugar
- 4 tablespoons cider vinegar
- ¼ teaspoon sea salt
- ¼ teaspoon fresh black pepper
- 1 cup water
Quick Pickle Recipe
Make your late garden harvests last through the winter with our “Quick Pickle” recipe! A Mountain South tradition, pickling can be an intimidating undertaking. But our “Quick Pickle” recipe is easy to prepare and perfect for those of us who want the same pay off of deliciousness in half the time. Below is a simple recipe and a list of our favorite (and some crazy) things to pickle at home.
Directions:
In a heavy saucepan combine all the ingredients and bring to boil. Blanch/cook the ingredients you want to pickle. (Note: Vegetables and meat will need blanching/cooking while fruit does not.) Remove the boiled combination from heat and pour over the “pickle ingredients” and seal in airtight container. Refrigerate for at least 2 hours and up to 2 weeks before serving.
What to Pickle:
You can pickle just about anything, but it’s best to do it with items that won’t get soggy, disintegrate or curdle…think veggies, hard fruits and meat. We’ve compiled a list of some of our favorite things to pickle, and some odd ones too…try experimenting at home!
