Brussels Sprouts
Makes 8 to 10 Servings
Ingredients
- 1.5 pounds Brussels sprouts
- 1/4 cup canola oil, for baking
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 cup Bacon Gremolata (recipe follows)
- 1 cup Garlic Ranch Dressing (recipe follows) or store-bought, for serving
Bacon Gremolata
Makes 12 Ounces
Ingredients
- 1 cup finely chopped fresh parsley
- 3 large cloves garlic, chopped
- 3 strips cooked maple-pepper bacon (or your favorite), chopped into 1/4-inch strips
- Finely grated zest of 2 fresh lemons
Garlic Ranch Dressing
Makes 2 Cups
Ingredients
- 2/3 cup buttermilk
- 2/3 cup sour cream
- 2/3 cup mayonnaise
- 2 tablespoons chopped fresh parsley
- 2 tablespoons chopped fresh chives
- 3 tablespoons roasted garlic puree
- 1 clove garlic, minced
- 1/2 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
Fried Brussels Sprouts with Bacon Gremolata
Brussels sprouts are really having a moment right now. Gone are the days of considering them just to be cabbage’s smaller, more bitter cousin. With the right seasoning and cooking method, these winter vegetables make the perfect side dish for whenever you need to impress (or just want to snack on something delicious)!

Directions
To make the sprouts, remove the brown ends from each sprout, then cut in half top to bottom. Place the sprouts in a 350°F deep fryer for 45 seconds to 1 minute, until just slightly light brown. Remove from the fryer using a slotted spoon and drain on a paper towel-lined plate.
As an alternative cooking method, bake the sprouts in a 400°F oven. First toss the sprouts in a bowl with 1/4 cup canola oil to coat. Place on a baking sheet and bake for 25 to 30 minutes, until light brown.
Season the cooked sprouts with salt, pepper and the gremolata. Adjust the seasoning as needed. Serve with the garlic ranch dressing.
Bacon Gremolata
Directions
To make the gremolata, combine the parsley, garlic, bacon, and lemon zest in a bowl. Set aside until ready to use.

Directions
To make the dressing, blend all the ingredients together in a food processor for 30 seconds. Refrigerate in an airtight container for up to 10 days.
