Ingredients
STRAWBERRY BUTTER
- 5 tablespoons unsalted butter, softened
- 3/4 cups minced fresh strawberries
- 1/8 teaspoon kosher salt
PANCAKES
- 1 1/2 cups Bisquick
- 2 large egg whites, lightly beaten
- 1 cup heavy cream
- 3 tablespoons applesauce
- 2 tablespoons water
- 1/8 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/2 cup semisweet chocolate chips
Little Jack’s Chocolate Chip Pancakes with Strawberry Butter
There is something so comforting about eating warm, fluffy pancakes (on any occasion). This recipe combines fresh strawberries and chocolate chips to create a pancake so delicious, it’s practically dessert!
Directions
For strawberry butter, place the softened butter, strawberries, and salt into a small bowl. Mix with a fork until the strawberries are coarsely mashed.
To make the pancakes, combine the Bisquick, egg whites, cream, applesauce, water, vanilla extract, almond extract, and chocolate chips into a medium bowl. Stir the mixture until all of the lumps are gone, adding an additional 1 to 2 tablespoons of water to thin if the mixture is too thick. Heat a griddle or skillet over medium-low heat and coat with cooking spray. Spoon the batter by heaping tablespoons onto the griddle, cooking for 3 minutes per side, or until golden brown. Top each pancake with 1 teaspoon of the strawberry butter and serve.
Makes 1/2 cup strawberry butter and 3 dozen pancakes.
