Ingredients
- 1 pie crust
- 6 eggs
- 1 cup heavy cream
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 1 1/2 cups (6 ounces) shredded cheese
- 2 tablespoons (1 ounce) grated Parmesan cheese
- 1 1/2 cups cooked filling, well drained
Filling Option 1
- 1/2 cup chopped cooked bacon
- 1/2 cup finely chopped onion
- 1/2 cup of either sauteed mushrooms OR chopped roasted red bell peppers
Filling Option 2
- 1/2 cup cooked spinach (squeezed dry)
- 1/2 cup finely chopped onion
- 1/2 cup sauteed mushrooms
- 1/2 cup either diced ham OR chopped cook bacon
My Oh My, Breakfast Pie!
We love pie for breakfast! Actually, we love pie anytime, but pie for breakfast is especially great. While there are two filling options listed below, feel free to create your own based on your preferences. Add broccoli, asparagus, sausage… you really can’t go wrong!
Directions
1. Preheat oven to 350 degrees Fahrenheit.
2. Place the pastry shell on a baking sheet for easier handling.
3. Beat the eggs in a large bowl with a wire whisk, whisking in the cream, salt, and pepper.
4. Sprinkle the shredded and grated cheeses into the bottom of the pasty shell and top with the filling of your choice.
5. Carefully pour the egg mixture evenly over the filling, allowing it to soak into the layers.
6. Bake until puffed, set, and lightly browned, 55-60 minutes.
