Rubbin’ is Racin’ Peach Moonshine Sweet Tea
Makes 1 Cocktail
INGREDIENTS
- 2 ounces Peach-Infused Moonshine (recipe follows)
- 1 ounce Mint Simple Syrup (recipe follows)
- 1/2 ounce freshly squeezed lemon juice
- 4 ounces chilled unsweetened iced tea
- 1 fresh peach, for garnish
- 1 fresh lemon, for garnish
- 1 fresh mint sprig, for garnish
Peach-Infused Moonshine
Makes about 24 ounces
INGREDIENTS
- 3-4 fresh ripe medium yellow peaches
- 1 (750-ml) bottle of moonshine
Mint Simple Syrup
Makes 1.75 cups
INGREDIENTS
- 1 cup sugar
- 8 (6-inch) stalks fresh mint

There is nothing more delicious, more sensuous, more fundamentally the taste-of-summer-in-the-South than ripe peaches. When their distinctive juicy sweetness is infused into the smokiness of moonshine then balanced with herbaceous iced tea, the result is both heavenly and earthy. We suggest serving this in a Mason jar – just to exaggerate the stereotype – but a tall iced tea glass works, too.
Rubbin’ is Racin’ Peach Moonshine Sweet Tea
Makes 1 Cocktail
DIRECTONS
Fill a 16-ounce Mason jar with cubed ice, and add the moonshine, Mint Simple Syrup, lemon juice, and tea. Stir well and garnish with a peach wedge, lemon wedge, and mint sprig.
Peach-Infused Moonshine
Makes about 24 ounces
DIRECTONS
Slice the peaches into eights and remove the pits. Place the sliced peaches (roughly 3 cups) into a 32-ounce Mason jar and fill with moonshine. Seal and store for at least 24 hours before using. Will keep up to 1 week at room temperature.
Mint Simple Syrup
Makes 1.75 cups
DIRECTONS
Combine 1.75 cups water with sugar and mint in a medium saucepan and bring to a boil over medium heat. Stir until the sugar is dissolved. Pour the syrup through a fine-mesh strainer into a container. Remove the mint stalks and leaves and discard. Let the syrup cool, and store in an airtight container in the refrigerator for up to 1 week.
