Blackberry-Thyme Jam
This recipe will yield 2 3 ounce cups of deliciousness.
Ingredients:
- 1 pound of blackberries, frozen or fresh
- 3/4 cup granulated sugar
- 2 1/2 tbsp. cornstarch
- 2 tbsp. water
- 1 tbsp. lemon juice
- 1 1/2 sprigs of thyme
Crisp Topping
Ingredients:
- 3 oz. butter, softened
- 2/3 cup all-purpose flower
- 2/3 cup rolled oats
- 1/2 tsp. kosher salt

This week we’re featuring one of our new mini mason jar desserts: blackberry crisp! This new fan favorite is the perfect combination of blueberries, thyme and crisp crust. Learn how to make this fabulous dessert yourself with little to no fuss!
Blackberry-Thyme Jam
Directions:
1. Combine blackberries, thyme sprigs, and sugar in a sauce pan and stir thoroughly; bring to a boil, then lower heat to a simmer, and let simmer for 10 minutes
2. Combine the cornstarch, water, and lemon juice in a separate bowl and mix well to form a slurry
3. After the berries have cooked for 10 minutes, add the slurry to the blackberries and mix well with a whisk
4. Turn the heat to medium and simmer for another 10 minutes, until thickened. The blackberries should retain their shape and have a glossy look to them
5. Remove sprigs of thyme and discard
6. Jam can now be cooled and refrigerated for later use or used immediately
Crisp Topping
Directions:
1. Add all ingredients to a KitchenAid mixer fitted with a paddle attachment
2. Mix until coarse crumbles form
3. Spread the crumble on a sheet pan and bake at 375 F for 20 minutes or until golden brown
4. Some spots may remain soft but will harden upon cooling
5. Once cool, break into ¼- ½” pieces and transfer to a storage container or use immediately
