We recently visited with Mishelle DeTillio, our beverage manager out of our flagship location in Downtown Asheville. She shared some her favorite scratch-made Southern food and drink pairings off our menus!

Boozy Rooster paired with the Pimento Pickle Burger

Our Boozy Rooster is made with Chicken Cock bourbon from nearby Charleston, SC, fresh muddled orange slice, brandied cherry, & Demerara sugar cube. It’s boozy intensity pairs well with the Pimento and Fried Pickle burger, a fan favorite made with our house pimiento cheese and house made fried pickles. Dishes with fried foods and cheese can stand up to a higher alcohol content in a cocktail so this pairing is a great match!

Shoo Mercy Pancake with the Sweet & Tart Mimosa

We offer a variety of mimosas for our brunch lovers. One of the newest favorites is the Sweet & Tart made with our house bubbly white wine, fresh blueberry purée and grapefruit juice. We paired this with our Shoo Mercy Sweet Potato Pancake because it is such a sweet and savory dish. It comes with our house sweet potato pancakes, bacon, buttermilk fried chicken, butter & powdered sugar as well as two farm fresh eggs. The mimosa, with its tart acidity and sweet purée, balances the vast components in this dish helping to cut through the savory flavor.

Eternal Spring with the Appalachian Spinach Salad

Our variation of a lemon drop martini made with Cathead Honeysuckle vodka, and a house-made lavender sour mix with fresh citrus juices and lavender simple syrup. This light, floral, and refreshing cocktail pairs well with our Appalachian Spinach Salad made with fresh spinach, blueberries, goat cheese, sweet potato purée and house roasted spiced pecans with our maple vinaigrette. The citrus backbone cuts through the intensity of the goat cheese and with some egg white in our mix the drink gives a silky mouth feel. This is a great pairing for a lighter lunch or dinner!
